Smoked Ham and Pesto Wrapped White Fish

Many people fear cooking fish. It is actually one of the easiest dishes to prepare. The cooking time is usually very short making fish a great go to meal after a long day at work.

There are so many types of fish to choose from it can be a little intimidating. This recipe works best with a mild, firm white fish like cod.


And amazingly this recipe works really well with shrimp. It was one of those moments when I was preparing dinner for 20 and ouch the fish wasn't good. So in a pinch I used shrimp. I actually think it was better than the fish would have been.

Serves 4
Prep time: 10 minutes
Total time: 30 minutes

Ingredients:

Sea salt and freshly cracked black pepper
4 chunky white fish fillets
4 slices smoked ham
2 tablespoons butter + a little more if necessary
4-6 ounces crème fraîche
2 tablespoons basil pesto
1/3 cup parmesan, finely grated
1 tablespoon pine nuts, roughly chopped

Instructions:

Heat oven to 375 degrees. Season the fish all over with salt and pepper. Wrap each fillet in a slice of ham.

Melt the butter in a baking dish that just holds the fish and add the fish to the dish. Dot the crème fraîche between the fillets and over the exposed ends of the fish. Dot the pesto around the fish, too. Scatter with the cheese.

Bake the fish for 15-20 minutes, adding the pine nuts halfway through. The crème fraîche should make a sauce around the fish, and the cheese and ham will turn golden. If the fish seems dry add a little more melted butter to the dish.

Tips:

  • The cooking time will depend on the thickness of the fish.
  • If the cheese begins to darken too much cover with foil.
