Basmati Rice with Apricots and Almonds

I love this recipe. You can serve it as a side or use it to stuff Cornish Hens. It is delicious.

Note: to serve as a side and for presentation purposes use long grain rice. The long grain rice will hold shape better due to a higher starch content.

Serves 8

Prep Time: 15 minutes, Total Time: 1 hour

Ingredients:

2 1/2 cups basmati rice
2 tablespoons olive oil
2 teaspoons roasted cumin seeds
2 bay leaves
3 cups chicken or vegetable broth
3/4 cup diced dried apricots
3/4 cup toasted sliced almonds
Salt and pepper to taste

Instructions:

In a medium saucepan, heat the oil. Add the rice and cumin and toast until fragrant. Add the broth and bring to a boil; cook covered until broth has been absorbed and the rice is tender, about 15-20 minutes.

Stir in apricots, almonds and salt and pepper and heat additional 5 minutes. Remove from heat, keep covered for about 5-10 minutes. Serve as side or use as stuffing.
