Mom’s Best Meatloaf

Mom made several favorite dinners that we had on a regular basis. Meatloaf night was always one of our favorites. She usually served the meatloaf with mashed potatoes and green peas. Meatloaf and mashed potatoes are on my top 10 list for best "Comfort Foods".

Serves 6-8

Ingredients:

  • 1 medium yellow onion, peeled and finely diced
  • 1 ½ pounds ground beef (80% lean)
  • 1/2 pound ground sausage
  • 1 egg, beaten
  • 1/2 cup fine bread crumbs
  • 4 cloves garlic, minced
  • Kosher salt and freshly cracked black pepper
  • 1 small can tomato sauce
    Topping:
  • ¼ cup brown sugar
  • 2 tablespoons white vinegar
  • 1 small can tomato paste

    Instructions:

    Preheat oven to 350 degrees F.

    In a large bowl combine onions through tomato sauce. Gently mix to incorporate ingredients.

    Mix brown sugar and vinegar with tomatoe paste and set aside.

    Transfer meat mixture to a 9 inch round baking dish or loaf pan and press firmly into dish. Bake for 45 minutes. Remove and pour off any grease from pan. Top with tomato paste mixture. Continue to cook until meat thermometer reaches 155 degrees. Should only take about 10 additional minutes. Watch so the tomato topping doesn't burn.

    Allow to rest 15 minutes. Temperature should reach 160 degrees.

    Cooking Wiser:

    Don’t over work the meat mixture. It will result in a touch meatloaf.
