Serves 4
Ingredients:
1 Jicama, peeled and cut into ½ inch cubes
1 lime, juice and zest
1 orange, juice and zest
1 stalk celery, sliced
1 cucumber, cut in half lengthwise
1 fresh Serrano chile, seeded, thinly sliced
2 radishes, julienned
1 cup small cherry tomatoes
Instructions:
1. Scoop out seeds from cucumber and dice
2. Combine all ingredients together and toss to coat with salt and citrus juices
3. Refrigerate for 1 hour before serving
