4 pounds tomatoes, cored and coarsely chopped
1 small onion, peeled and thinly sliced
½ cup capers
½ cup Flat leaf parsley leaves, minced
1 cup fresh basil leaves, chiffonade
½ cup extra virgin olive oil
Fine sea salt
Freshly ground black pepper
