Chicken Wings with an Italian Flare

Wings are a great appetizer for parties or special events. This favorite uses three traditional, dried "Italian" herbs.

Serves 8-10
Prep Time: 15 minutes
Total Time: 2 hours 15 minutes

Ingredients:

  • 6 pounds chicken wings
  • ½ cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh basil, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • ½ tablespoon dried oregano, finely chopped
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 2 tablespoons balsamic vinegar

    Instructions:

Preheat oven to 350 degrees F.

Place wings into a baking dish large enough for single layer.

In a small bowl combine remaining ingredients, pour over wings, and toss to coat with sauce.

Bake covered for 45 minutes, uncover and continue to cook 15-20 more minutes or until wings are very tender. If wings begin to dry out slowly add enough hot chicken broth or hot water to baking dish to cover bottom of dish.

    Cooking wiser:
To save time make sauce in advance; it will keep in refrigerator for a day or two.
Cook chicken until juices thicken wings are very tender.
For a quick version combine 1 package dry Italian seasoning with oil and proceed by tossing sauce over wings, OR toss wings evenly with a commercial Italian dressing. Cook as directed above
To increase flavor, marinate wings for 1-2 hours.
