Fresh Apple Salsa

Try this side dish with chips, roasted meats, or your favorite quesadillas. It's even good as a salad served over spinach greens

Serves 12 (1/4 cup)
Prep time: 15 minutes
Total time: 20 minutes

Ingredients:

  • 2 cups diced peeled sweet tart apple (Fuji, Jonagold)
  • ½ cup diced red bell pepper
  • 1/3 cup fresh lime juice
  • ¼ cup diced red onion
  • ¼ cup minced fresh cilantro
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 jalapeno pepper, seeded and minced

    Instructions:

    Combine all ingredients, stirring well

    Terri’s Tips:

  • Make in advance and refrigerate for 4-8 hours to develop flavors
  • Serve with cinnamon chips or tortilla chips
  • Serve with roasted chicken or pork
  • Serve with your favorite cheese quesadillas
